Recipe Follow-up and Much Needed Monday ZZZs

Well the evening was a success! Hurrah! Much fibrous plant-based nourishment was had by all. We started off with the Curried Split Pea Soup from Real Food Daily, which I think was my favourite out of all three recipes. I added some collard greens to it since I had them on hand and they are very tough to eat raw. I’m still waiting on a response from them to see if I can post the recipe. It’s unbelievable. Best homemade soup I have ever eaten, if I do say so myself. I think everyone loved it.

Then we had the Quinoa Vegetable Paella, which was delicious except that next time I will add a wider variety of spices to give it a bit of a stronger flavour.

And finally, we finished off with the Coconut Chai Breakfast Cake, or as I keep calling it “Spice” cake, which is appropriate since it does have quite a yummy kick to it. Highly recommended! I love coconut in recipes.

All in all, I couldn’t believe how much fun I had really cooking again. The blog intensifies this experience since writing the list of recipes was a strong motivator to actually start working through them. I can’t wait to try more, and the next one I am hoping for is the delicious vegan mac n cheeze recipe from Real Food Daily made with cashews… which sounds utterly delicious.

And since it’s really late and I am getting worn out from this Nablopomo project, I thought I would post some more snippets from my web meanderings:

I have read that kiwi is considered the healthiest fruit there is, up there with blueberries, and both have low amounts of poison residue even when you buy the conventional (read: poisoned) variety.

With almost as much potassium as a banana, more vitamin C than an orange, it’s hard to beat these…..but did I mention the kiwifruit oil also has omega 3 fatty acids? Kiwi are low in calories and, like most plant-based foods, also supply some calcium.

MMM what a delicious way to get your Omega 3s. And did you know that the skin has nutritional benefits? Antioxidants and etc. I was happy to hear this since I have enjoyed eating it for years and everyone laughed at me!

Dolphins Rescue Surfer from Shark:

Surfer Todd Endris needed a miracle. The shark — a monster great white that came out of nowhere — had hit him three times, peeling the skin off his back and mauling his right leg to the bone.

That’s when a pod of bottlenose dolphins intervened, forming a protective ring around Endris, allowing him to get to shore, where quick first aid provided by a friend saved his life.

No one knows why dolphins protect humans, but stories of the marine mammals rescuing humans go back to ancient Greece, according to the Whale and Dolphin Conservation Society.

A year ago in New Zealand, the group reports, four lifeguards were saved from sharks in the same way Endris was — by dolphins forming a protective ring.

Here is a clear example of animals showing compassion, an emotion many deny that they have the capacity to experience.

And I’m just about out of content for this evening… exhausted and feeling swamped with all of the things I aspire to do but can’t seem to wrap my time around. Here’s to a good night’s sleep and a new day on the horizon.
